I have been longing for a pina colada for months. Odd, but since before Christmas I have been having craving for this tropical summer drink like a raving loony.
I even bought a bottle of Angostura bitters for it, only to find that none of my local stores actually sold pineapple juice in the winter. Cue the crestfallen face. 
But lo and behold, this weekend, sitting high and pretty on the shelves…pineapple juice. Perfect because a week earlier I bought a can of the coconut goodness I remember seeing at the bar of a vacay about seventeen years ago but of which the pina colada was so good I never forgot. But who am I without a little side-step from the standard?
On my quest to eat and drink better I swapped my addiction to artificial peach ice tea for fruit juices. My favourite being cherry, mouth puckering sour cherry. I figured why not mix the sweet of the pineapple with the tart of the cherry? Topped with a double wedge of rum-roasted sugary pineapple and the flavors keep on coming. 

I used 4 fl. oz. of the lusciously sweet Coco Lopez cream of coconut, 3 fl. oz pineapple juice, 1 fl. oz. sour cherry juice and a cup and a half of ice. Crushed and blended and topped with a good dash of Angostura bitters and two slices of pineapple still dripping butter-rum basting!

While I still longing for bare skin, my sunlounger, lazing under a brelly, I can at least drink up with a bowl of cinnamon-coconut sugar almonds in my super cute happy girl dish (here and here on sale). My ode to a great summer to come!
