'Ontbijtkoek' is a Dutch tradition and staple in my home. My kids have a slice every morning for breakfast. I however never eat it because I like my sweet sweet and my spicy spicy and never the two shall me.
But we recently made gingerbread cookies and a light bulb went off. "Heck yea, spicy sweet can be be pretty darned tasty'' (in my head followed by and expletive but hey..).
I decided to give it a go and this is the result. A lighter, less dense version of that breakfast staple, that is good at any time of the day but is amazing with a glass of milk to start the day. Or a coffee as in my case.
Ontbijtkoek
140 grams patent flour
140 grams dark brown sugar
125 grams softened full-cream butter
2 large eggs
a fourth a teaspoon salt
a half teaspoon baking powder
a teaspoon ground cinnamon
a teaspoon ground nutmeg
a teaspoon ground ginger
a half teaspoon ground cloves
1-2 tablespoons maple syrup
1-2 tablespoons full-fat milk
Salted caramel
It doesn't get much simpler than throwing all the ingredients except the milk and maple in the food processor with mixer attachment, till creamed. Than the maple and milk. The liquids I add tablespoon my tablespoon, as to guard from it getting to runny. The finished batter is thick, light brown and yumtastic! I drizzled a couple tablespoons of leftover salted caramel sauce over the top and dragged them through with the back of a knife.
Bake in buttered and floured loaf tin for 55 minutes (check after 40 minutes) at 175 Celsius (or your oven's moderate temp) or until a skewer comes out clean. A last drizzle of caramel and then it's just cool, slice and eat!!
P.S. I served my cake and milk with an old-school knitted towel, antique silver server and my new Skogsta cutting board and Sinnerlig jug from Ikea, that I have lusting after.
